The in-custody log shows who is there right now. If someone was booked yesterday and posted bail this morning, they may not appear on the in-custody log anymore. But their booking record still exists. For those records, you would need to contact the Monterey County Sheriff directly.

Monterey County Booking Law
California Government Code 7923.610 requires all California law enforcement agencies to release booking data to the public. The Monterey County Sheriff follows this law. Every booking at the county jail creates a record with the person's full name, date of birth, physical description, arrest date and time, booking date and time, arrest location, charges, bail amount, and holding facility. None of this can be withheld from a public request.
The California Public Records Act provides the legal backbone for these requests. Booking records are carved out as a special category. Even when other police records can be kept confidential under Government Code 7923.600, booking data stays public. The Monterey County Sheriff must respond to records requests within 10 days. Arrested people in Monterey County get phone call rights under Penal Code 851.5. Three free calls within three hours of booking. The calls can go to a lawyer, bail agent, or relative. The Monterey County jail cannot charge for these calls. This applies to every person booked there.
